  • Chili powder - 1/2 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Score the chestnuts by making an 'X' shape on the flat side of each chestnut to allow steam to escape during roasting.
  3. In a mixing bowl, combine the scored chestnuts, olive oil, Himalayan pink salt, ground black pepper, and chili powder. Toss until the chestnuts are evenly coated.
  4. Spread the chestnuts in a single layer on a baking sheet.
  5. Roast in the preheated oven for 20-25 minutes, or until the shells have opened and the nuts are tender.
  6. Remove from the oven and let them cool for a few minutes. Peel the shells while they are still warm.
