Ingredients

  • Roasted chestnuts - 200 grams
  • Coconut milk - 200 ml
  • Vegetable broth - 500 ml

  • Ginger - 1 inch, grated
  • Cumin powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Ghee or coconut oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. Heat the ghee or coconut oil in a large pot over medium heat.
  2. Add the chopped onion, and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and grated ginger, cooking for another 1-2 minutes until fragrant.
  4. Add the cumin, turmeric, and coriander powder, and stir well to combine.
  5. Add the roasted chestnuts, vegetable broth, and coconut milk to the pot, and bring to a boil.
  6. Reduce the heat and let it simmer for about 15 minutes, allowing the flavors to meld.
  7. Use an immersion blender to puree the soup until smooth, or transfer to a blender in batches.
  8. Season with salt and black pepper to taste.
  9. Serve hot, garnished with fresh cilantro.
