Steps
- Preheat your oven to 180°C (350°F) and grease a baking dish with ghee.
- In a bowl, combine the rice flour and salt. Gradually add water and knead into a smooth dough.
- In another bowl, mix grated coconut, jaggery, and cardamom powder until well combined.
- Divide the rice flour dough into small balls (about the size of a golf ball).
- Flatten each ball into a small disc using your palms, about 1/4 inch thick.
- Place a spoonful of the coconut mixture in the center of each disc and fold the edges over to enclose the filling, forming a half-moon shape.
- Arrange the filled pithas in the greased baking dish and brush the tops lightly with ghee.
- Bake in the preheated oven for 25-30 minutes or until the pithas turn golden brown.
- Remove from the oven and let cool for a few minutes before serving.
