Ingredients

  • Semolina (Rawa) - 1/2 cup
  • Water - 1 cup
  • Jaggery (grated) - 1/3 cup
  • Coconut oil - 2 tablespoons
  • Cardamom powder - 1/2 teaspoon
  • Cashews (broken) - 2 tablespoons
  • Raisins - 2 tablespoons
  • Turmeric powder - a pinch
  • Salt - a pinch

Steps

  1. Heat 1 tablespoon of coconut oil in a pan over medium heat.
  2. Add the broken cashews and raisins to the pan and sauté until the cashews turn golden brown and raisins puff up. Remove them from the pan and set aside.
  3. In the same pan, add the semolina and roast it on low heat for about 4-5 minutes until it turns light golden and aromatic. Be careful not to burn it.
  4. In a separate pot, bring 1 cup of water to a boil. Once boiling, add the grated jaggery, a pinch of salt, and turmeric powder. Stir until the jaggery dissolves completely.
  5. Slowly pour the jaggery water into the roasted semolina, stirring continuously to avoid lumps.
  6. Add cardamom powder and mix well. Cook for another 2-3 minutes until the mixture thickens and starts to leave the sides of the pan.
  7. Add the sautéed cashews and raisins back into the mixture, along with the remaining coconut oil. Mix everything well.
  8. Remove from heat, let it cool for a couple of minutes, and then serve warm.
