Ingredients
- Semolina (Rawa) - 1/2 cup
- Water - 1 cup
- Jaggery (grated) - 1/3 cup
- Coconut oil - 2 tablespoons
- Cardamom powder - 1/2 teaspoon
- Cashews (broken) - 2 tablespoons
- Raisins - 2 tablespoons
- Turmeric powder - a pinch
- Salt - a pinch
Steps
- Heat 1 tablespoon of coconut oil in a pan over medium heat.
- Add the broken cashews and raisins to the pan and sauté until the cashews turn golden brown and raisins puff up. Remove them from the pan and set aside.
- In the same pan, add the semolina and roast it on low heat for about 4-5 minutes until it turns light golden and aromatic. Be careful not to burn it.
- In a separate pot, bring 1 cup of water to a boil. Once boiling, add the grated jaggery, a pinch of salt, and turmeric powder. Stir until the jaggery dissolves completely.
- Slowly pour the jaggery water into the roasted semolina, stirring continuously to avoid lumps.
- Add cardamom powder and mix well. Cook for another 2-3 minutes until the mixture thickens and starts to leave the sides of the pan.
- Add the sautéed cashews and raisins back into the mixture, along with the remaining coconut oil. Mix everything well.
- Remove from heat, let it cool for a couple of minutes, and then serve warm.
