Rawa Idli

Ingredients
- Semolina (Rawa) - 1 cup
- Yogurt - 1/2 cup
- Water - 1/2 cup
- Eno fruit salt - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Mustard seeds - 1 teaspoon
- Curry leaves - 8-10 leaves
- Ginger (grated) - 1 teaspoon
- Green chilies (finely chopped) - 1 teaspoon
- Oil - 1 tablespoon
- Vegetables (finely chopped, optional - carrot, peas) - 1/4 cup
Steps
- In a mixing bowl, combine semolina, yogurt, and water. Mix well and let it rest for 15 minutes.
- After resting, add salt, grated ginger, and chopped green chilies to the mixture. If using, add the finely chopped vegetables.
- Just before steaming, add the Eno fruit salt to the batter and mix gently. You will see bubbles forming as it aerates.
- Grease idli molds with a little oil. Pour the batter into the molds, filling them about 3/4 full.
- In a small pan, heat 1 tablespoon of oil, add mustard seeds and curry leaves, and allow them to splutter. Pour this tempering over the idli batter in the molds.
- Steam the idlis in a steamer or pressure cooker (without the weight) for 10-12 minutes or until a toothpick inserted comes out clean.
- Once done, remove the idlis from the molds and serve hot with coconut chutney and sambar.
