Rawa Idli

Ingredients

  • Semolina (Rawa) - 1 cup
  • Yogurt - 1/2 cup
  • Water - 1/2 cup
  • Eno fruit salt - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Mustard seeds - 1 teaspoon
  • Curry leaves - 8-10 leaves
  • Ginger (grated) - 1 teaspoon
  • Green chilies (finely chopped) - 1 teaspoon
  • Oil - 1 tablespoon
  • Vegetables (finely chopped, optional - carrot, peas) - 1/4 cup

Steps

  1. In a mixing bowl, combine semolina, yogurt, and water. Mix well and let it rest for 15 minutes.
  2. After resting, add salt, grated ginger, and chopped green chilies to the mixture. If using, add the finely chopped vegetables.
  3. Just before steaming, add the Eno fruit salt to the batter and mix gently. You will see bubbles forming as it aerates.
  4. Grease idli molds with a little oil. Pour the batter into the molds, filling them about 3/4 full.
  5. In a small pan, heat 1 tablespoon of oil, add mustard seeds and curry leaves, and allow them to splutter. Pour this tempering over the idli batter in the molds.
  6. Steam the idlis in a steamer or pressure cooker (without the weight) for 10-12 minutes or until a toothpick inserted comes out clean.
  7. Once done, remove the idlis from the molds and serve hot with coconut chutney and sambar.
