- Semolina - 1 cup
- Rice flour - 1/2 cup
- All-purpose flour - 1/4 cup
- Water - 2 1/2 cups
- Salt - 1 teaspoon
- Cumin seeds - 1 teaspoon
- Black mustard seeds - 1 teaspoon
- Chopped green chilies - 1 tablespoon
- Chopped ginger - 1 tablespoon
- Chopped coriander leaves - 2 tablespoons
- Oil - for cooking
Steps
- In a mixing bowl, combine semolina, rice flour, all-purpose flour, and salt.
- Add water gradually while whisking to create a smooth batter. The consistency should be slightly thinner than pancake batter.
- Stir in cumin seeds, black mustard seeds, chopped green chilies, chopped ginger, and chopped coriander leaves. Let the batter rest for 15 minutes.
- Heat a non-stick skillet or tawa over medium heat and lightly grease it with oil.
- Pour a ladleful of batter onto the skillet and quickly spread it in a circular motion to form a thin dosa.
- Drizzle a little oil around the edges and on top of the dosa. Cook until the edges turn golden and crispy, about 2-3 minutes.
- Flip the dosa and cook for another minute until the other side is golden brown.
- Repeat the process with the remaining batter, greasing the skillet as needed.
- Serve hot with coconut chutney and sambar.
