Ingredients

  • Semolina - 1 cup
  • Rice flour - 1/2 cup
  • All-purpose flour - 1/4 cup
  • Water - 2 1/2 cups
  • Salt - 1 teaspoon
  • Cumin seeds - 1 teaspoon
  • Black mustard seeds - 1 teaspoon
  • Chopped green chilies - 1 tablespoon
  • Chopped ginger - 1 tablespoon
  • Chopped coriander leaves - 2 tablespoons
  • Oil - for cooking

Steps

  1. In a mixing bowl, combine semolina, rice flour, all-purpose flour, and salt.
  2. Add water gradually while whisking to create a smooth batter. The consistency should be slightly thinner than pancake batter.
  3. Stir in cumin seeds, black mustard seeds, chopped green chilies, chopped ginger, and chopped coriander leaves. Let the batter rest for 15 minutes.
  4. Heat a non-stick skillet or tawa over medium heat and lightly grease it with oil.
  5. Pour a ladleful of batter onto the skillet and quickly spread it in a circular motion to form a thin dosa.
  6. Drizzle a little oil around the edges and on top of the dosa. Cook until the edges turn golden and crispy, about 2-3 minutes.
  7. Flip the dosa and cook for another minute until the other side is golden brown.
  8. Repeat the process with the remaining batter, greasing the skillet as needed.
  9. Serve hot with coconut chutney and sambar.
