- Semolina (Rawa) - 1 cup
- Yogurt - 1/2 cup
- Water - 1/2 cup
- Turmeric powder - 1/2 tsp
- Baking soda - 1/2 tsp
- Salt - 1/2 tsp
- Green chili (finely chopped) - 1
- Ginger (grated) - 1 tsp
- Coriander leaves (chopped) - 2 tbsp
- Mustard seeds - 1 tsp
- Sesame seeds - 1 tsp
- Curry leaves - 8-10
- Oil - 1 tbsp
Steps
- In a mixing bowl, combine semolina, yogurt, water, turmeric powder, salt, green chili, ginger, and coriander leaves. Mix well to form a smooth batter.
- Let the batter rest for 15 minutes to allow the semolina to absorb the moisture.
- Add baking soda to the batter and mix gently. The batter will rise slightly.
- Grease a steaming tray or a round cake tin with oil.
- Pour the batter into the greased tray, spreading it evenly.
- Prepare a steamer with boiling water and place the tray inside. Cover and steam for 15-20 minutes or until a toothpick inserted comes out clean.
- In a small pan, heat oil and add mustard seeds. Once they splutter, add sesame seeds and curry leaves. Sauté for a few seconds.
- Pour the tempering over the steamed dhokla and let it rest for a few minutes.
- Cut the dhokla into squares and serve warm with green chutney or sweet chutney.
