Ingredients

  • Semolina (Rawa) - 1 cup
  • Yogurt - 1/2 cup
  • Water - 1/2 cup
  • Turmeric powder - 1/2 tsp
  • Baking soda - 1/2 tsp
  • Salt - 1/2 tsp
  • Green chili (finely chopped) - 1
  • Ginger (grated) - 1 tsp
  • Coriander leaves (chopped) - 2 tbsp
  • Mustard seeds - 1 tsp
  • Sesame seeds - 1 tsp
  • Curry leaves - 8-10
  • Oil - 1 tbsp

Steps

  1. In a mixing bowl, combine semolina, yogurt, water, turmeric powder, salt, green chili, ginger, and coriander leaves. Mix well to form a smooth batter.
  2. Let the batter rest for 15 minutes to allow the semolina to absorb the moisture.
  3. Add baking soda to the batter and mix gently. The batter will rise slightly.
  4. Grease a steaming tray or a round cake tin with oil.
  5. Pour the batter into the greased tray, spreading it evenly.
  6. Prepare a steamer with boiling water and place the tray inside. Cover and steam for 15-20 minutes or until a toothpick inserted comes out clean.
  7. In a small pan, heat oil and add mustard seeds. Once they splutter, add sesame seeds and curry leaves. Sauté for a few seconds.
  8. Pour the tempering over the steamed dhokla and let it rest for a few minutes.
  9. Cut the dhokla into squares and serve warm with green chutney or sweet chutney.
