Ingredients
- Semolina (rava) - 100 grams
- Water - 400 ml
- Sugar - 80 grams
- Coconut oil - 2 tablespoons
- Cashews - 2 tablespoons
- Raisins - 2 tablespoons
- Cardamom powder - 1/4 teaspoon
- Saffron strands - a pinch
- Turmeric powder - 1/4 teaspoon (for color)
Steps
- In a small bowl, soak the saffron strands in 2 tablespoons of warm water and set aside.
- Heat a pan on medium heat and add the coconut oil.
- Once the oil is hot, add the cashews and raisins, and sauté until the cashews are golden brown and the raisins are plump.
- Remove the nuts and raisins from the pan and set them aside.
- In the same pan, add the semolina and roast it on low flame, stirring continuously until it turns golden and aromatic, about 5-7 minutes.
- In a separate pot, bring the water to a boil, then add the sugar, turmeric powder, and cardamom powder, stirring until the sugar dissolves.
- Slowly pour the boiling sugar water mixture into the roasted semolina, stirring continuously to avoid lumps.
- Add the soaked saffron water and mix well. Cook on low flame for another 5-7 minutes, stirring occasionally until the mixture thickens and starts to leave the sides of the pan.
- Finally, fold in the sautéed cashews and raisins. Mix well and remove from heat.
- Let it cool slightly before serving. Enjoy warm or at room temperature.
