Rasmalai
Rasmalai is a delightful Indian dessert made of soft cheese dumplings soaked in sweetened milk, flavored with cardamom and garnished with nuts. This gluten-free treat is perfect for a midnight indulgence.

Ingredients
- Milk - 1 liter
- Lemon juice - 3 tablespoons
- Sugar - 100 grams
- Cardamom powder - 1/2 teaspoon
- Saffron strands - a pinch
- Chopped pistachios - 2 tablespoons
- Chopped almonds - 2 tablespoons
- Rose water - 1 teaspoon
Steps
- In a heavy-bottomed pan, boil the milk over medium heat, stirring frequently to prevent it from burning.
- Once the milk comes to a boil, reduce the heat and add the lemon juice gradually, stirring gently until the milk curdles.
- Remove from heat and let it sit for a few minutes. Strain the curds through a muslin cloth or fine sieve to separate the whey.
- Rinse the curds under cold water to remove the sourness of the lemon juice. Squeeze out excess water and hang the cloth for about 30 minutes.
- Once the chenna (curds) is ready, knead it gently for about 5-7 minutes until smooth.
- Divide the chenna into small balls and flatten them slightly to form discs (about 2 inches in diameter).
- In a separate pan, dissolve the sugar in 1 cup of water and bring it to a boil. Add the chenna discs gently and cook for about 10-12 minutes until they double in size.
- In another pot, boil the remaining milk and reduce it to about half the volume. Add cardamom powder, saffron, and rose water.
- Once the milk is thickened, add the cooked chenna discs to the milk and simmer for an additional 5 minutes.
- Serve chilled, garnished with chopped pistachios and almonds.
