Rasmalai

Rasmalai is a delightful Indian dessert made of soft cheese dumplings soaked in sweetened milk, flavored with cardamom and garnished with nuts. This gluten-free treat is perfect for a midnight indulgence.

Ingredients

  • Milk - 1 liter
  • Lemon juice - 3 tablespoons
  • Sugar - 100 grams
  • Cardamom powder - 1/2 teaspoon
  • Saffron strands - a pinch
  • Chopped pistachios - 2 tablespoons
  • Chopped almonds - 2 tablespoons
  • Rose water - 1 teaspoon

Steps

  1. In a heavy-bottomed pan, boil the milk over medium heat, stirring frequently to prevent it from burning.
  2. Once the milk comes to a boil, reduce the heat and add the lemon juice gradually, stirring gently until the milk curdles.
  3. Remove from heat and let it sit for a few minutes. Strain the curds through a muslin cloth or fine sieve to separate the whey.
  4. Rinse the curds under cold water to remove the sourness of the lemon juice. Squeeze out excess water and hang the cloth for about 30 minutes.
  5. Once the chenna (curds) is ready, knead it gently for about 5-7 minutes until smooth.
  6. Divide the chenna into small balls and flatten them slightly to form discs (about 2 inches in diameter).
  7. In a separate pan, dissolve the sugar in 1 cup of water and bring it to a boil. Add the chenna discs gently and cook for about 10-12 minutes until they double in size.
  8. In another pot, boil the remaining milk and reduce it to about half the volume. Add cardamom powder, saffron, and rose water.
  9. Once the milk is thickened, add the cooked chenna discs to the milk and simmer for an additional 5 minutes.
  10. Serve chilled, garnished with chopped pistachios and almonds.
