Ingredients
- Tomatoes - 200 grams, chopped
- Tamarind pulp - 1 tablespoon
- Water - 500 ml
- Mustard seeds - 1 teaspoon
- Cumin seeds - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Turmeric powder - 1/4 teaspoon
- Salt - to taste
- Fresh coriander leaves - 2 tablespoons, chopped
- Ginger - 1 teaspoon, grated
- Green chili - 1, slit
- Asafoetida (hing) - a pinch
- Oil - 1 teaspoon
Steps
- In a small bowl, soak the tamarind pulp in 2 tablespoons of warm water for 10 minutes, then extract the juice and set aside.
- In a saucepan, heat 1 teaspoon of oil over medium heat and add mustard seeds. Once they begin to splutter, add cumin seeds, black pepper, and a pinch of asafoetida.
- Add the grated ginger and slit green chili to the pan, sautéing for 1-2 minutes until fragrant.
- Add the chopped tomatoes and turmeric powder, cooking until the tomatoes soften (about 5-7 minutes).
- Pour in 500 ml of water and the tamarind juice, then season with salt. Bring to a boil and let it simmer for 10 minutes.
- Finally, stir in the chopped coriander leaves and remove from heat. Serve hot.
