Ingredients

  • Tomatoes - 200 grams, chopped
  • Tamarind pulp - 1 tablespoon
  • Water - 500 ml
  • Mustard seeds - 1 teaspoon
  • Cumin seeds - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Turmeric powder - 1/4 teaspoon
  • Salt - to taste
  • Fresh coriander leaves - 2 tablespoons, chopped
  • Ginger - 1 teaspoon, grated
  • Green chili - 1, slit
  • Asafoetida (hing) - a pinch
  • Oil - 1 teaspoon

Steps

  1. In a small bowl, soak the tamarind pulp in 2 tablespoons of warm water for 10 minutes, then extract the juice and set aside.
  2. In a saucepan, heat 1 teaspoon of oil over medium heat and add mustard seeds. Once they begin to splutter, add cumin seeds, black pepper, and a pinch of asafoetida.
  3. Add the grated ginger and slit green chili to the pan, sautéing for 1-2 minutes until fragrant.
  4. Add the chopped tomatoes and turmeric powder, cooking until the tomatoes soften (about 5-7 minutes).
  5. Pour in 500 ml of water and the tamarind juice, then season with salt. Bring to a boil and let it simmer for 10 minutes.
  6. Finally, stir in the chopped coriander leaves and remove from heat. Serve hot.
