Ingredients

  • Full-fat milk - 500 ml
  • Lemon juice - 2 tablespoons
  • Sugar - 100 grams
  • Cardamom powder - 1/4 teaspoon
  • Saffron strands - a pinch
  • Chopped pistachios - 1 tablespoon
  • Chopped almonds - 1 tablespoon
  • Rose water - 1 teaspoon

Steps

  1. In a heavy-bottomed pot, bring the full-fat milk to a boil over medium heat.
  2. Once boiling, reduce the heat and add lemon juice gradually while stirring. The milk will curdle and separate into curds and whey.
  3. Remove from heat and strain the curds using a cheesecloth or fine sieve. Rinse with cold water to remove the lemon flavor and press out excess water.
  4. Knead the curds for about 5-7 minutes until smooth and form small balls (about 1 inch in diameter) for the cheese dumplings.
  5. In a separate pot, combine 1 liter of water and 50 grams of sugar. Bring to a boil, then gently add the cheese balls, cooking them for about 10 minutes until they double in size.
  6. In another saucepan, simmer the remaining milk with 50 grams of sugar, cardamom powder, saffron strands, and rose water until it thickens slightly (about 15-20 minutes).
  7. Remove the cheese balls from the syrup and place them in the thickened milk. Let them soak for at least 30 minutes in the refrigerator.
  8. Serve chilled, garnished with chopped pistachios and almonds.
