Ingredients
- Full-fat milk - 500 ml
- Lemon juice - 2 tablespoons
- Sugar - 100 grams
- Cardamom powder - 1/4 teaspoon
- Saffron strands - a pinch
- Chopped pistachios - 1 tablespoon
- Chopped almonds - 1 tablespoon
- Rose water - 1 teaspoon
Steps
- In a heavy-bottomed pot, bring the full-fat milk to a boil over medium heat.
- Once boiling, reduce the heat and add lemon juice gradually while stirring. The milk will curdle and separate into curds and whey.
- Remove from heat and strain the curds using a cheesecloth or fine sieve. Rinse with cold water to remove the lemon flavor and press out excess water.
- Knead the curds for about 5-7 minutes until smooth and form small balls (about 1 inch in diameter) for the cheese dumplings.
- In a separate pot, combine 1 liter of water and 50 grams of sugar. Bring to a boil, then gently add the cheese balls, cooking them for about 10 minutes until they double in size.
- In another saucepan, simmer the remaining milk with 50 grams of sugar, cardamom powder, saffron strands, and rose water until it thickens slightly (about 15-20 minutes).
- Remove the cheese balls from the syrup and place them in the thickened milk. Let them soak for at least 30 minutes in the refrigerator.
- Serve chilled, garnished with chopped pistachios and almonds.
