Ingredients

  • Rajma (kidney beans) - 200 grams (soaked overnight)
  • Onion - 1 medium (finely chopped)
  • Ginger - 1 inch (grated)
  • Garlic - 3 cloves (minced)
  • Green chili - 1 (finely chopped)
  • Cilantro - 2 tablespoons (chopped)
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Rice flour - 2 tablespoons
  • Bread crumbs - 2 tablespoons
  • Ghee or oil - for shallow frying

Steps

  1. Drain and rinse the soaked rajma, then boil in fresh water until soft (about 20-25 minutes). Drain and let cool.
  2. In a mixing bowl, mash the boiled rajma until smooth. Add chopped onion, ginger, garlic, green chili, and cilantro.
  3. Season the mixture with cumin, coriander, red chili powder, garam masala, and salt. Mix well to combine.
  4. Add rice flour and bread crumbs to the mixture to help bind it. Adjust the texture as needed.
  5. Divide the mixture into equal portions and shape each portion into small round or oval patties.
  6. Heat ghee or oil in a skillet over medium heat. Once hot, add the kebabs in batches, cooking until golden brown on both sides (about 3-4 minutes per side).
  7. Remove the kebabs and place them on a paper towel to absorb excess oil. Serve hot with mint chutney.
