Ingredients
- Rajma (kidney beans) - 200 grams (soaked overnight)
- Onion - 1 medium (finely chopped)
- Ginger - 1 inch (grated)
- Garlic - 3 cloves (minced)
- Green chili - 1 (finely chopped)
- Cilantro - 2 tablespoons (chopped)
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Red chili powder - 1/2 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - to taste
- Rice flour - 2 tablespoons
- Bread crumbs - 2 tablespoons
- Ghee or oil - for shallow frying
Steps
- Drain and rinse the soaked rajma, then boil in fresh water until soft (about 20-25 minutes). Drain and let cool.
- In a mixing bowl, mash the boiled rajma until smooth. Add chopped onion, ginger, garlic, green chili, and cilantro.
- Season the mixture with cumin, coriander, red chili powder, garam masala, and salt. Mix well to combine.
- Add rice flour and bread crumbs to the mixture to help bind it. Adjust the texture as needed.
- Divide the mixture into equal portions and shape each portion into small round or oval patties.
- Heat ghee or oil in a skillet over medium heat. Once hot, add the kebabs in batches, cooking until golden brown on both sides (about 3-4 minutes per side).
- Remove the kebabs and place them on a paper towel to absorb excess oil. Serve hot with mint chutney.
