- Besan (gram flour) - 100 grams
- Water - 50 ml (for dough)
- Salt - 1/2 teaspoon
- Turmeric powder - 1/4 teaspoon
- Red chili powder - 1 teaspoon
- Cumin seeds - 1/2 teaspoon
- Oil - 2 tablespoons (for frying and gravy)
- Onion - 1 medium (finely chopped)
- Ginger-garlic paste - 1 teaspoon
- Green chili - 1 (slit)
- Tomato - 1 medium (pureed)
- Yogurt - 100 grams (whisked)
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Fresh coriander leaves - for garnish
Steps
- In a bowl, mix besan, salt, turmeric powder, and red chili powder. Gradually add water to form a smooth, firm dough.
- Divide the dough into small portions and roll them into cylindrical shapes (gatte).
- Boil water in a pot, add the gatte, and cook for about 10-12 minutes until they float on top. Remove and cool before cutting them into bite-sized pieces.
- In a pan, heat 1 tablespoon of oil. Add cumin seeds and let them splutter. Then add chopped onions and sauté until golden brown.
- Add ginger-garlic paste and green chili, and sauté for another minute.
- Stir in the tomato puree and cook for 5-7 minutes until the oil separates from the mixture.
- Add coriander powder, garam masala, and salt; mix well.
- Lower the heat and add whisked yogurt while stirring continuously to prevent curdling. Cook for another 2-3 minutes.
- Add the boiled gatte pieces to the gravy, mix gently, and simmer for 5 minutes to allow the flavors to meld.
- Garnish with fresh coriander leaves and serve hot with gluten-free roti or rice.
