Ingredients

  • Whole wheat flour - 1 cup
  • Semolina - 2 tablespoons
  • Ghee - 4 tablespoons (for baati)
  • Baking powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Water - as needed
  • Chana dal - 1/2 cup
  • Turmeric powder - 1/2 teaspoon
  • Cumin seeds - 1/2 teaspoon
  • Ginger paste - 1 teaspoon
  • Green chilies - 1-2, finely chopped
  • Tomato - 1 medium, finely chopped
  • Cilantro - 2 tablespoons, chopped
  • Garam masala - 1/2 teaspoon
  • Lemon juice - 1 tablespoon
  • Sugar - 1 tablespoon (for churma)
  • Almonds - 2 tablespoons, chopped (for churma)
  • Cardamom powder - 1/4 teaspoon (for churma)
  • Ghee - 1 tablespoon (for churma)

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a mixing bowl, combine whole wheat flour, semolina, baking powder, and salt. Add 4 tablespoons of ghee and mix well.
  3. Gradually add water and knead to form a smooth dough. Let it rest for 15 minutes.
  4. Meanwhile, rinse the chana dal and soak it in water for about 30 minutes.
  5. In a pressure cooker, add the soaked chana dal, turmeric powder, and sufficient water (about 2 cups). Cook for 3-4 whistles until soft.
  6. Once the dal is cooked, heat 1 tablespoon of ghee in a pan, add cumin seeds, ginger paste, green chilies, and chopped tomatoes. Sauté until the tomatoes are soft.
  7. Add the cooked chana dal to the pan, mix well, and add garam masala, lemon juice, and chopped cilantro. Simmer for 5-10 minutes.
  8. Divide the baati dough into small balls and shape them. Place them on a baking tray and bake for 20-25 minutes or until golden brown, turning halfway through.
  9. For churma, take the remaining ghee in a pan, add the baked baatis, and crush them into crumbs. Mix in sugar, chopped almonds, and cardamom powder. Cook for 2-3 minutes on low heat.
  10. Serve hot baati with dal, topped with ghee, and churma on the side.
