- Ragi flour - 100 grams
- Coconut milk - 200 ml
- Jaggery - 50 grams
- Water - 300 ml
- Cardamom powder - 1/2 teaspoon
- Chopped nuts (cashews, almonds) - 2 tablespoons
- Salt - a pinch
- Vanilla extract - 1/2 teaspoon (optional)
Steps
- In a medium saucepan, combine the ragi flour, water, and a pinch of salt. Mix well to avoid lumps.
- Heat the mixture over medium flame, stirring continuously until it begins to thicken.
- Once thickened, add the coconut milk and continue to stir until well combined.
- In a separate bowl, dissolve the jaggery in a small amount of warm water, then add it to the ragi mixture.
- Add cardamom powder and vanilla extract (if using), and mix well. Cook for another 5-7 minutes until the pudding reaches a creamy consistency.
- Remove from heat and let it cool slightly before serving. Top with chopped nuts before serving.
