Ingredients

  • Ragi flour - 100 grams
  • Coconut milk - 200 ml
  • Jaggery - 50 grams
  • Water - 300 ml
  • Cardamom powder - 1/2 teaspoon
  • Chopped nuts (cashews, almonds) - 2 tablespoons
  • Salt - a pinch
  • Vanilla extract - 1/2 teaspoon (optional)

Steps

  1. In a medium saucepan, combine the ragi flour, water, and a pinch of salt. Mix well to avoid lumps.
  2. Heat the mixture over medium flame, stirring continuously until it begins to thicken.
  3. Once thickened, add the coconut milk and continue to stir until well combined.
  4. In a separate bowl, dissolve the jaggery in a small amount of warm water, then add it to the ragi mixture.
  5. Add cardamom powder and vanilla extract (if using), and mix well. Cook for another 5-7 minutes until the pudding reaches a creamy consistency.
  6. Remove from heat and let it cool slightly before serving. Top with chopped nuts before serving.
