- Ragi flour - 100 grams
- Water - 600 ml
- Milk - 200 ml (optional)
- Jaggery - 30 grams (or to taste)
- Cardamom powder - 1/2 teaspoon
- Salt - a pinch
- Ghee - 1 tablespoon
- Chopped nuts (almonds, cashews) - 2 tablespoons
- Fresh fruits (banana, apple) - for topping (optional)
Steps
- In a medium saucepan, bring water to a boil over medium heat.
- Once boiling, reduce the heat to low and gradually add the ragi flour, stirring continuously to avoid lumps.
- Add a pinch of salt and continue to stir for about 5-7 minutes until the mixture thickens.
- In a separate small pot, heat the milk (if using) and dissolve jaggery in it, then add cardamom powder.
- Pour the jaggery milk mixture into the ragi porridge and mix well, cooking for an additional 2-3 minutes.
- Remove from heat and let it cool slightly before serving.
- In a small pan, heat ghee and lightly roast the chopped nuts until golden brown.
- Serve the ragi porridge warm, topped with roasted nuts and fresh fruits if desired.
