Ingredients

  • Ragi flour - 100 grams
  • Water - 600 ml
  • Milk - 200 ml (optional)
  • Jaggery - 30 grams (or to taste)
  • Cardamom powder - 1/2 teaspoon
  • Salt - a pinch
  • Ghee - 1 tablespoon
  • Chopped nuts (almonds, cashews) - 2 tablespoons
  • Fresh fruits (banana, apple) - for topping (optional)

Steps

  1. In a medium saucepan, bring water to a boil over medium heat.
  2. Once boiling, reduce the heat to low and gradually add the ragi flour, stirring continuously to avoid lumps.
  3. Add a pinch of salt and continue to stir for about 5-7 minutes until the mixture thickens.
  4. In a separate small pot, heat the milk (if using) and dissolve jaggery in it, then add cardamom powder.
  5. Pour the jaggery milk mixture into the ragi porridge and mix well, cooking for an additional 2-3 minutes.
  6. Remove from heat and let it cool slightly before serving.
  7. In a small pan, heat ghee and lightly roast the chopped nuts until golden brown.
  8. Serve the ragi porridge warm, topped with roasted nuts and fresh fruits if desired.
