- Ragi flour - 100 grams
- Ghee - 2 tablespoons
- Water - 300 ml
- Erythritol or stevia - 3 tablespoons (or to taste)
- Cardamom powder - 1/2 teaspoon
- Chopped nuts (almonds, cashews) - 2 tablespoons
- Raisins - 1 tablespoon
- Salt - a pinch
Steps
- In a pan, heat 2 tablespoons of ghee over medium heat.
- Add the ragi flour and roast it until it turns slightly aromatic and light brown, about 4-5 minutes, stirring continuously to avoid burning.
- In a separate pot, bring 300 ml of water to a boil.
- Once the ragi is roasted, slowly add the boiling water to the pan while stirring continuously to prevent lumps from forming.
- Add erythritol or stevia, cardamom powder, and a pinch of salt, and mix well.
- Cook the mixture on low heat for about 10-12 minutes until it thickens and starts to leave the sides of the pan.
- Stir in the chopped nuts and raisins, and cook for another 2-3 minutes.
- Remove from heat, let it cool slightly, and serve warm.
