Ingredients

  • Ragi flour - 100 grams
  • Ghee - 2 tablespoons
  • Water - 300 ml
  • Erythritol or stevia - 3 tablespoons (or to taste)
  • Cardamom powder - 1/2 teaspoon
  • Chopped nuts (almonds, cashews) - 2 tablespoons
  • Raisins - 1 tablespoon
  • Salt - a pinch

Steps

  1. In a pan, heat 2 tablespoons of ghee over medium heat.
  2. Add the ragi flour and roast it until it turns slightly aromatic and light brown, about 4-5 minutes, stirring continuously to avoid burning.
  3. In a separate pot, bring 300 ml of water to a boil.
  4. Once the ragi is roasted, slowly add the boiling water to the pan while stirring continuously to prevent lumps from forming.
  5. Add erythritol or stevia, cardamom powder, and a pinch of salt, and mix well.
  6. Cook the mixture on low heat for about 10-12 minutes until it thickens and starts to leave the sides of the pan.
  7. Stir in the chopped nuts and raisins, and cook for another 2-3 minutes.
  8. Remove from heat, let it cool slightly, and serve warm.
