- Pizza base - 1 large (30 cm diameter)
- Boiled potatoes - 250 grams, mashed
- Green peas - 100 grams, cooked
- Chickpeas - 200 grams, boiled
- Onion - 1 medium, finely chopped
- Tomato - 1 medium, finely chopped
- Coriander leaves - 2 tablespoons, chopped
- Green chili - 1, finely chopped
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Chaat masala - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Salt - to taste
- Oil - 2 tablespoons
- Vegan cheese - 100 grams, grated (optional)
- Lemon juice - 1 tablespoon
Steps
- In a pan, heat the oil over medium heat and sauté the chopped onions until translucent.
- Add the chopped tomatoes, green chili, cumin powder, coriander powder, turmeric powder, and salt. Cook until the tomatoes are soft.
- Stir in the boiled chickpeas and a little water to make a thick gravy. Cook for 5-7 minutes until the mixture thickens. Add the garam masala, chaat masala, and lemon juice. Mix well and set aside.
- In a bowl, combine the mashed potatoes, cooked green peas, chopped coriander leaves, and salt. Form this mixture into small patties.
- Heat a non-stick pan and lightly fry the patties until golden brown on both sides. Remove and set aside.
- Preheat the oven to 200°C (392°F).
- Spread the ragda mixture evenly on the pizza base, then place the fried pattice on top.
- Sprinkle vegan cheese over the pattice if using.
- Bake in the preheated oven for 10-15 minutes or until the pizza base is crisp and the cheese is melted.
- Remove from oven, garnish with extra coriander leaves, and serve hot.
