Ingredients

  • Pizza base - 1 large (30 cm diameter)
  • Boiled potatoes - 250 grams, mashed
  • Green peas - 100 grams, cooked
  • Chickpeas - 200 grams, boiled
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, finely chopped
  • Coriander leaves - 2 tablespoons, chopped
  • Green chili - 1, finely chopped
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Chaat masala - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Salt - to taste
  • Oil - 2 tablespoons
  • Vegan cheese - 100 grams, grated (optional)
  • Lemon juice - 1 tablespoon

Steps

  1. In a pan, heat the oil over medium heat and sauté the chopped onions until translucent.
  2. Add the chopped tomatoes, green chili, cumin powder, coriander powder, turmeric powder, and salt. Cook until the tomatoes are soft.
  3. Stir in the boiled chickpeas and a little water to make a thick gravy. Cook for 5-7 minutes until the mixture thickens. Add the garam masala, chaat masala, and lemon juice. Mix well and set aside.
  4. In a bowl, combine the mashed potatoes, cooked green peas, chopped coriander leaves, and salt. Form this mixture into small patties.
  5. Heat a non-stick pan and lightly fry the patties until golden brown on both sides. Remove and set aside.
  6. Preheat the oven to 200°C (392°F).
  7. Spread the ragda mixture evenly on the pizza base, then place the fried pattice on top.
  8. Sprinkle vegan cheese over the pattice if using.
  9. Bake in the preheated oven for 10-15 minutes or until the pizza base is crisp and the cheese is melted.
  10. Remove from oven, garnish with extra coriander leaves, and serve hot.
