Ingredients

  • Potatoes - 300 grams
  • Green peas (boiled) - 100 grams
  • Bread crumbs - 2 tablespoons
  • Ginger - 1 teaspoon (grated)
  • Green chili - 1 (finely chopped)
  • Coriander powder - 1 teaspoon
  • Cumin powder - 1/2 teaspoon
  • Turmeric powder - 1/4 teaspoon
  • Salt - to taste
  • Oil - for frying
  • White peas (soaked overnight) - 100 grams
  • Onion - 1 small (finely chopped)
  • Tomato - 1 small (finely chopped)
  • Garlic - 2 cloves (minced)
  • Cilantro (fresh) - for garnish
  • Lemon - 1 (cut into wedges)
  • Chaat masala - 1 teaspoon
  • Green chutney - for serving
  • Tamarind chutney - for serving

Steps

  1. Boil the potatoes until tender, then peel and mash them in a bowl. Mix in bread crumbs, grated ginger, chopped green chili, coriander powder, cumin powder, turmeric powder, and salt to form a dough.
  2. Divide the potato mixture into equal portions and shape them into flat patties. Heat oil in a frying pan over medium heat and fry the patties until golden brown on both sides. Remove and set aside.
  3. In a pressure cooker, add soaked white peas, water, and a pinch of salt. Cook for about 15-20 minutes until soft. Drain and set aside.
  4. In a pan, heat a tablespoon of oil and sauté chopped onions until translucent. Add minced garlic and chopped tomatoes, cooking until the tomatoes are soft.
  5. Add the cooked white peas to the pan along with a cup of water. Season with salt, and simmer for 10 minutes to blend the flavors. Mash slightly to thicken the curry.
  6. To serve, place two patties on a plate, top with the ragda (white pea curry), and garnish with chopped cilantro, chaat masala, and serve with lemon wedges, green chutney, and tamarind chutney on the side.
