- Potatoes - 300 grams
- Green peas (boiled) - 100 grams
- Bread crumbs - 2 tablespoons
- Ginger - 1 teaspoon (grated)
- Green chili - 1 (finely chopped)
- Coriander powder - 1 teaspoon
- Cumin powder - 1/2 teaspoon
- Turmeric powder - 1/4 teaspoon
- Salt - to taste
- Oil - for frying
- White peas (soaked overnight) - 100 grams
- Onion - 1 small (finely chopped)
- Tomato - 1 small (finely chopped)
- Garlic - 2 cloves (minced)
- Cilantro (fresh) - for garnish
- Lemon - 1 (cut into wedges)
- Chaat masala - 1 teaspoon
- Green chutney - for serving
- Tamarind chutney - for serving
Steps
- Boil the potatoes until tender, then peel and mash them in a bowl. Mix in bread crumbs, grated ginger, chopped green chili, coriander powder, cumin powder, turmeric powder, and salt to form a dough.
- Divide the potato mixture into equal portions and shape them into flat patties. Heat oil in a frying pan over medium heat and fry the patties until golden brown on both sides. Remove and set aside.
- In a pressure cooker, add soaked white peas, water, and a pinch of salt. Cook for about 15-20 minutes until soft. Drain and set aside.
- In a pan, heat a tablespoon of oil and sauté chopped onions until translucent. Add minced garlic and chopped tomatoes, cooking until the tomatoes are soft.
- Add the cooked white peas to the pan along with a cup of water. Season with salt, and simmer for 10 minutes to blend the flavors. Mash slightly to thicken the curry.
- To serve, place two patties on a plate, top with the ragda (white pea curry), and garnish with chopped cilantro, chaat masala, and serve with lemon wedges, green chutney, and tamarind chutney on the side.
