Ingredients

  • Full-fat milk - 500 ml
  • Sugar - 50 g
  • Cardamom powder - 1/4 tsp
  • Saffron strands - a pinch
  • Almonds (sliced) - 15 g
  • Pistachios (chopped) - 15 g
  • Rosewater - 1 tsp

Steps

  1. In a heavy-bottomed pan, bring the full-fat milk to a boil over medium heat, stirring occasionally to prevent it from sticking.
  2. Once it boils, reduce the heat to low and let it simmer until it reduces to about half its volume, stirring frequently (about 25-30 minutes).
  3. Add the sugar, cardamom powder, and saffron strands to the reduced milk. Stir well to combine and cook for an additional 5 minutes.
  4. Remove the pan from heat and let the rabri cool slightly before adding the rosewater.
  5. Serve the rabri warm or chilled, garnished with sliced almonds and chopped pistachios.
