- Quinoa - 100 grams
- Water - 250 ml
- Potato - 100 grams, boiled and mashed
- Onion - 1 medium, finely chopped
- Green chili - 1, finely chopped
- Ginger - 1 teaspoon, grated
- Coriander leaves - 2 tablespoons, chopped
- Cumin powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - to taste
- Rice flour - 2 tablespoons
- Bread crumbs - 2 tablespoons
- Oil - for shallow frying
- Whole wheat burger buns - 2
- Lettuce leaves - 2
- Tomato - 1, sliced
- Cucumber - 1, sliced
Steps
- Rinse the quinoa under cold water, then combine it with 250 ml of water in a saucepan. Bring to a boil, then reduce heat, cover, and simmer for about 15 minutes or until water is absorbed. Fluff with a fork and let cool.
- In a large bowl, combine the cooled quinoa, mashed potato, chopped onion, green chili, grated ginger, chopped coriander, cumin powder, garam masala, and salt. Mix well until all ingredients are fully incorporated.
- Add rice flour and bread crumbs to the mixture to help bind the ingredients. Form the mixture into two patties.
- Heat oil in a non-stick skillet over medium heat. Once hot, add the patties and cook for about 4-5 minutes on each side, or until golden brown and crispy.
- To assemble the burgers, place a lettuce leaf on the bottom half of each whole wheat bun. Add the quinoa vada patty, followed by a slice of tomato and cucumber. Top with the other half of the bun and serve immediately.
