Ingredients

  • Quinoa - 100 grams
  • Water - 250 ml
  • Potato - 100 grams, boiled and mashed
  • Onion - 1 medium, finely chopped
  • Green chili - 1, finely chopped
  • Ginger - 1 teaspoon, grated
  • Coriander leaves - 2 tablespoons, chopped
  • Cumin powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Rice flour - 2 tablespoons
  • Bread crumbs - 2 tablespoons
  • Oil - for shallow frying
  • Whole wheat burger buns - 2
  • Lettuce leaves - 2
  • Tomato - 1, sliced
  • Cucumber - 1, sliced

Steps

  1. Rinse the quinoa under cold water, then combine it with 250 ml of water in a saucepan. Bring to a boil, then reduce heat, cover, and simmer for about 15 minutes or until water is absorbed. Fluff with a fork and let cool.
  2. In a large bowl, combine the cooled quinoa, mashed potato, chopped onion, green chili, grated ginger, chopped coriander, cumin powder, garam masala, and salt. Mix well until all ingredients are fully incorporated.
  3. Add rice flour and bread crumbs to the mixture to help bind the ingredients. Form the mixture into two patties.
  4. Heat oil in a non-stick skillet over medium heat. Once hot, add the patties and cook for about 4-5 minutes on each side, or until golden brown and crispy.
  5. To assemble the burgers, place a lettuce leaf on the bottom half of each whole wheat bun. Add the quinoa vada patty, followed by a slice of tomato and cucumber. Top with the other half of the bun and serve immediately.
