  • Potato (boiled and mashed) - 1 medium

  • Ginger (grated) - 1 teaspoon
  • Garlic (minced) - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Cumin powder - 1/2 teaspoon
  • Garam masala - 1/2 teaspoon
  • Chili powder - 1/4 teaspoon
  • Salt - 1/2 teaspoon
  • Fresh coriander leaves (chopped) - 2 tablespoons
  • Rice flour - 2 tablespoons
  • Oil (for shallow frying) - 2 tablespoons

  • Lettuce leaves - 2
  • Tomato slices - 2
  • Cucumber slices - 4

Steps

  1. Rinse the quinoa under cold water, then combine it with 1 cup of water in a saucepan. Bring to a boil, reduce to a simmer, cover, and cook for about 15 minutes or until the quinoa is fluffy and water is absorbed. Let it cool.
  2. In a large mixing bowl, combine the cooked quinoa, mashed potato, cooked green peas, chopped onion, grated ginger, minced garlic, coriander powder, cumin powder, garam masala, chili powder, salt, and chopped coriander leaves. Mix well until all ingredients are combined.
  3. Add the rice flour to the mixture to help bind the patties. Form the mixture into two equal-sized patties.
  4. Heat oil in a non-stick skillet over medium heat. Carefully place the patties in the skillet and cook for about 4-5 minutes on each side, or until golden brown and crispy.
  5. While the patties are frying, prepare the burger buns by toasting them lightly if desired.
  6. Assemble the burgers by placing a lettuce leaf on the bottom half of the bun, followed by the quinoa tikki patty, a slice of tomato, and cucumber. Top with the other half of the bun and serve hot.
