- Quinoa - 100 grams
- Water - 250 ml
- Cucumber - 1 medium, diced
- Tomato - 1 medium, diced
- Red onion - 1 small, finely chopped
- Bell pepper - 1 small, diced
- Green chili - 1, finely chopped (optional)
- Fresh coriander leaves - 2 tablespoons, chopped
- Lemon juice - 2 tablespoons
- Olive oil - 1 tablespoon
- Cumin powder - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the quinoa under cold water to remove any bitterness.
- In a saucepan, combine the rinsed quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes until quinoa is fluffy and water is absorbed.
- Remove from heat and let it cool for a few minutes.
- In a large mixing bowl, combine the diced cucumber, tomato, red onion, bell pepper, green chili, and chopped coriander.
- Add the cooked quinoa to the vegetable mixture and toss gently to combine.
- In a small bowl, whisk together the lemon juice, olive oil, cumin powder, salt, and black pepper.
