Ingredients

  • Quinoa - 100 grams
  • Water - 250 ml
  • Cucumber - 1 medium, diced
  • Tomato - 1 medium, diced
  • Red onion - 1 small, finely chopped
  • Bell pepper - 1 small, diced
  • Green chili - 1, finely chopped (optional)
  • Fresh coriander leaves - 2 tablespoons, chopped
  • Lemon juice - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Cumin powder - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the quinoa under cold water to remove any bitterness.
  2. In a saucepan, combine the rinsed quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes until quinoa is fluffy and water is absorbed.
  3. Remove from heat and let it cool for a few minutes.
  4. In a large mixing bowl, combine the diced cucumber, tomato, red onion, bell pepper, green chili, and chopped coriander.
  5. Add the cooked quinoa to the vegetable mixture and toss gently to combine.
  6. In a small bowl, whisk together the lemon juice, olive oil, cumin powder, salt, and black pepper.
  7. Pour the dressing over the quinoa salad and mix well.
  8. Serve chilled or at room temperature.
