- Capsicum (diced) - 1 medium
- Peas (fresh or frozen) - 1/2 cup

Steps
- Rinse the quinoa under cold water until the water runs clear, then drain.
- In a medium saucepan, bring 2 cups of water to a boil. Add the rinsed quinoa and a pinch of salt. Reduce heat to low, cover, and simmer for 15 minutes, or until the quinoa is cooked and the water is absorbed. Fluff with a fork and set aside.
- In a large skillet, heat the olive oil over medium heat. Add cumin seeds and mustard seeds, and sauté until they start to crackle.
- Add the chopped onion, minced garlic, and grated ginger to the skillet. Sauté until the onion is translucent.

- Add the diced tomato, garam masala, salt, and black pepper. Cook for another 2-3 minutes, mixing well.
- Combine the cooked quinoa with the sautéed vegetables in the skillet. Mix in the chopped cilantro and lemon juice.
- Serve the quinoa pulao salad warm or at room temperature.
