Ingredients

  • Quinoa - 1 cup
  • Water - 2 cups
  • Olive oil - 1 tablespoon
  • Cumin seeds - 1 teaspoon
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Mixed vegetables (carrots, peas, bell pepper) - 1 cup, chopped
  • Green chili - 1, slit (optional)
  • Turmeric powder - 1/2 teaspoon
  • Garam masala - 1 teaspoon
  • Salt - to taste
  • Fresh coriander leaves - for garnish

Steps

  1. Rinse the quinoa under cold water until the water runs clear to remove bitterness.
  2. In a saucepan, heat olive oil over medium heat. Add cumin seeds and let them splutter.
  3. Add the chopped onion and sauté until it becomes translucent.
  4. Stir in the minced garlic, grated ginger, and green chili, cooking for another minute until fragrant.
  5. Add the mixed vegetables, turmeric powder, and salt. Cook for 3-4 minutes until the vegetables are slightly tender.
  6. Add the rinsed quinoa and stir well to combine with the vegetables.
  7. Pour in the water, bring it to a boil, then reduce the heat to low. Cover and simmer for 15 minutes, or until the quinoa is cooked and water is absorbed.
  8. Once done, remove from heat and let it sit covered for 5 minutes. Fluff the quinoa with a fork.
  9. Garnish with fresh coriander leaves before serving.
