- Quinoa - 1 cup
- Water - 2 cups
- Olive oil - 1 tablespoon
- Cumin seeds - 1 teaspoon
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Mixed vegetables (carrots, peas, bell pepper) - 1 cup, chopped
- Green chili - 1, slit (optional)
- Turmeric powder - 1/2 teaspoon
- Garam masala - 1 teaspoon
- Salt - to taste
- Fresh coriander leaves - for garnish
Steps
- Rinse the quinoa under cold water until the water runs clear to remove bitterness.
- In a saucepan, heat olive oil over medium heat. Add cumin seeds and let them splutter.
- Add the chopped onion and sauté until it becomes translucent.
- Stir in the minced garlic, grated ginger, and green chili, cooking for another minute until fragrant.
- Add the mixed vegetables, turmeric powder, and salt. Cook for 3-4 minutes until the vegetables are slightly tender.
- Add the rinsed quinoa and stir well to combine with the vegetables.
- Pour in the water, bring it to a boil, then reduce the heat to low. Cover and simmer for 15 minutes, or until the quinoa is cooked and water is absorbed.
- Once done, remove from heat and let it sit covered for 5 minutes. Fluff the quinoa with a fork.
- Garnish with fresh coriander leaves before serving.
