Ingredients

  • Quinoa - 100 grams
  • Water - 250 ml
  • Mixed berries (strawberries, blueberries, raspberries) - 200 grams
  • Almonds (sliced) - 30 grams
  • Coconut flakes (unsweetened) - 20 grams
  • Honey (or maple syrup for strict Paleo) - 1 tablespoon
  • Lemon juice - 1 tablespoon
  • Fresh mint leaves - a handful (optional)

Steps

  1. Rinse the quinoa under cold water to remove any bitterness.
  2. In a saucepan, combine the rinsed quinoa and water. Bring to a boil.
  3. Reduce the heat, cover, and simmer for about 15 minutes or until the quinoa is cooked and water is absorbed.
  4. Remove from heat and let it sit covered for 5 minutes, then fluff with a fork.
  5. While the quinoa cools, wash and prepare the mixed berries.
  6. In a large bowl, combine the cooked quinoa, mixed berries, sliced almonds, and coconut flakes.
  7. In a small bowl, whisk together the honey and lemon juice, then drizzle over the salad.
  8. Toss gently to combine all the ingredients and adjust sweetness if necessary.
  9. Garnish with fresh mint leaves if desired and serve immediately.
