- Whole wheat flour - 1 cup
- Water - 1/4 cup (adjust as needed)
- Salt - 1/2 teaspoon
- Oil - for deep frying (about 1-2 cups)
- Chickpeas (canned or boiled) - 1 cup
- Onion - 1 medium, finely chopped
- Tomato - 1 medium, pureed
- Ginger-garlic paste - 1 teaspoon
- Green chili - 1, slit
- Cumin seeds - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Cumin powder - 1/2 teaspoon
- Garam masala - 1/2 teaspoon
- Turmeric powder - 1/4 teaspoon
- Fresh coriander leaves - for garnish
- Lemon - 1, cut into wedges
Steps
- In a mixing bowl, combine whole wheat flour and salt. Gradually add water and knead to form a soft dough. Cover with a damp cloth and let it rest for 20 minutes.
- In a pan, heat 1 tablespoon of oil over medium heat. Add cumin seeds and let them splutter.
- Add chopped onions and sauté until golden brown. Stir in the ginger-garlic paste and green chili, cooking for an additional minute.
- Add the tomato puree, turmeric, coriander powder, cumin powder, and salt. Cook until the oil separates from the mixture.
- Stir in the chickpeas, add 1 cup of water, and bring to a gentle boil. Simmer for 10-15 minutes, allowing the flavors to meld. Finish with garam masala and garnish with fresh coriander leaves.
- While the chole is simmering, heat oil in a deep frying pan. Divide the dough into small balls and roll each ball into a small disc.
- Deep fry the puris in hot oil until they puff up and turn golden brown. Remove and drain on paper towels.
- Serve the hot puris with the chole and lemon wedges on the side.
