  • Whole wheat flour - 1 cup
  • Water - 1/4 cup (adjust as needed)
  • Salt - 1/2 teaspoon
  • Oil - for deep frying (about 1-2 cups)
  • Chickpeas (canned or boiled) - 1 cup
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, pureed
  • Ginger-garlic paste - 1 teaspoon
  • Green chili - 1, slit
  • Cumin seeds - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Cumin powder - 1/2 teaspoon
  • Garam masala - 1/2 teaspoon
  • Turmeric powder - 1/4 teaspoon
  • Fresh coriander leaves - for garnish
  • Lemon - 1, cut into wedges

Steps

  1. In a mixing bowl, combine whole wheat flour and salt. Gradually add water and knead to form a soft dough. Cover with a damp cloth and let it rest for 20 minutes.
  2. In a pan, heat 1 tablespoon of oil over medium heat. Add cumin seeds and let them splutter.
  3. Add chopped onions and sauté until golden brown. Stir in the ginger-garlic paste and green chili, cooking for an additional minute.
  4. Add the tomato puree, turmeric, coriander powder, cumin powder, and salt. Cook until the oil separates from the mixture.
  5. Stir in the chickpeas, add 1 cup of water, and bring to a gentle boil. Simmer for 10-15 minutes, allowing the flavors to meld. Finish with garam masala and garnish with fresh coriander leaves.
  6. While the chole is simmering, heat oil in a deep frying pan. Divide the dough into small balls and roll each ball into a small disc.
  7. Deep fry the puris in hot oil until they puff up and turn golden brown. Remove and drain on paper towels.
  8. Serve the hot puris with the chole and lemon wedges on the side.
