Ingredients

  • Whole wheat flour - 1 cup
  • Water - 1/4 cup (more as needed)
  • Salt - 1/2 teaspoon
  • Oil (for frying) - 2 cups
  • Potatoes (boiled and mashed) - 2 medium
  • Onion (finely chopped) - 1 small
  • Green chili (finely chopped) - 1 small
  • Ginger (grated) - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Cumin seeds - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Fresh cilantro (chopped) - 2 tablespoons
  • Lemon juice - 1 teaspoon

Steps

  1. In a mixing bowl, combine the whole wheat flour and salt. Gradually add water and knead to form a soft dough. Cover and let it rest for 15 minutes.
  2. In another bowl, mix the boiled and mashed potatoes with chopped onion, green chili, ginger, turmeric powder, cumin seeds, coriander powder, garam masala, cilantro, and lemon juice. Mix well and set aside.
  3. Divide the dough into equal portions and roll each portion into a ball. Roll out each ball into a small circle (about 4 inches in diameter) using a rolling pin.
  4. Heat oil in a deep frying pan over medium heat. Once hot, carefully slide in one puri at a time. Fry until they puff up and turn golden brown, about 30-40 seconds on each side.
  5. Remove the puris from the oil and drain on paper towels. Repeat the frying process for the remaining puris.
  6. Serve the hot puris with the spiced potato filling on the side.
