Puri Bhaji

Ingredients

  • Whole wheat flour - 1 cup
  • Water - 1/4 cup (plus more as needed)
  • Salt - 1/2 teaspoon
  • Oil - for deep frying
  • Potatoes - 2 medium, boiled and mashed
  • Onion - 1 medium, finely chopped
  • Tomato - 1 small, chopped
  • Green chili - 1, finely chopped
  • Ginger - 1 teaspoon, grated
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Fresh coriander leaves - for garnish

Steps

  1. In a mixing bowl, combine whole wheat flour and salt. Gradually add water and knead to form a soft dough. Cover and let it rest for 15 minutes.
  2. Heat oil in a deep frying pan over medium heat for puris.
  3. Divide the dough into 6-8 equal portions and roll each portion into a ball. Roll out each ball into a circle of about 4 inches in diameter.
  4. Once the oil is hot, gently slide in the rolled puris one at a time. Fry until they puff up and are golden brown on both sides. Remove and drain on paper towels.
  5. For the bhaji, in a separate pan, heat a tablespoon of oil. Add cumin seeds and let them splutter.
  6. Add chopped onions and sauté until translucent. Then add ginger, green chili, and chopped tomato. Cook until the tomato softens.
  7. Stir in turmeric, coriander powder, and garam masala. Add the mashed potatoes and mix well. Cook for another 2-3 minutes, stirring occasionally.
  8. Garnish with fresh coriander leaves and serve hot with puris.
