Puri Bhaji

- Whole wheat flour - 1 cup
- Water - 1/4 cup (plus more as needed)
- Salt - 1/2 teaspoon
- Oil - for deep frying
- Potatoes - 2 medium, boiled and mashed
- Onion - 1 medium, finely chopped
- Tomato - 1 small, chopped
- Green chili - 1, finely chopped
- Ginger - 1 teaspoon, grated
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Fresh coriander leaves - for garnish
Steps
- In a mixing bowl, combine whole wheat flour and salt. Gradually add water and knead to form a soft dough. Cover and let it rest for 15 minutes.
- Heat oil in a deep frying pan over medium heat for puris.
- Divide the dough into 6-8 equal portions and roll each portion into a ball. Roll out each ball into a circle of about 4 inches in diameter.
- Once the oil is hot, gently slide in the rolled puris one at a time. Fry until they puff up and are golden brown on both sides. Remove and drain on paper towels.
- For the bhaji, in a separate pan, heat a tablespoon of oil. Add cumin seeds and let them splutter.
- Add chopped onions and sauté until translucent. Then add ginger, green chili, and chopped tomato. Cook until the tomato softens.
- Stir in turmeric, coriander powder, and garam masala. Add the mashed potatoes and mix well. Cook for another 2-3 minutes, stirring occasionally.
- Garnish with fresh coriander leaves and serve hot with puris.
