Puran Poli

Ingredients

  • Whole wheat flour - 150 grams
  • Split yellow moong dal - 100 grams
  • Jaggery (grated) - 75 grams
  • Cardamom powder - 1/2 teaspoon
  • Turmeric powder - 1/4 teaspoon
  • Salt - 1/4 teaspoon
  • Oil - 1 tablespoon
  • Water - 150 ml
  • Ghee (clarified butter) - for cooking

Steps

  1. Rinse the split yellow moong dal under cold water and soak it for 30 minutes.
  2. In a pot, add the soaked moong dal and enough water to cover it. Cook it until soft, about 20-25 minutes. Drain any excess water.
  3. In a mixing bowl, mash the cooked dal and mix in the grated jaggery, cardamom powder, turmeric powder, and salt. Set aside to cool.
  4. In another bowl, combine the whole wheat flour, salt, and oil. Gradually add water and knead to form a smooth dough. Cover with a damp cloth and let it rest for 15 minutes.
  5. Divide the dough into 4 equal portions and roll each portion into a small ball.
  6. Take one dough ball and flatten it slightly. Place a tablespoon of the sweet dal filling in the center and bring the edges together to seal it. Gently flatten it into a disc.
  7. Dust with flour and roll out the disc carefully into a thin circle, about 6-7 inches in diameter, without letting the filling spill out.
  8. Heat a tava or non-stick skillet over medium heat. Place the rolled puran poli on the hot tava and cook for about 1-2 minutes on each side, applying ghee as needed, until golden brown spots appear.
  9. Repeat the process for the remaining dough and filling.
  10. Serve warm with a dollop of ghee on top.
