Puran Poli

Ingredients
- Whole wheat flour - 150 grams
- Split yellow moong dal - 100 grams
- Jaggery (grated) - 75 grams
- Cardamom powder - 1/2 teaspoon
- Turmeric powder - 1/4 teaspoon
- Salt - 1/4 teaspoon
- Oil - 1 tablespoon
- Water - 150 ml
- Ghee (clarified butter) - for cooking
Steps
- Rinse the split yellow moong dal under cold water and soak it for 30 minutes.
- In a pot, add the soaked moong dal and enough water to cover it. Cook it until soft, about 20-25 minutes. Drain any excess water.
- In a mixing bowl, mash the cooked dal and mix in the grated jaggery, cardamom powder, turmeric powder, and salt. Set aside to cool.
- In another bowl, combine the whole wheat flour, salt, and oil. Gradually add water and knead to form a smooth dough. Cover with a damp cloth and let it rest for 15 minutes.
- Divide the dough into 4 equal portions and roll each portion into a small ball.
- Take one dough ball and flatten it slightly. Place a tablespoon of the sweet dal filling in the center and bring the edges together to seal it. Gently flatten it into a disc.
- Dust with flour and roll out the disc carefully into a thin circle, about 6-7 inches in diameter, without letting the filling spill out.
- Heat a tava or non-stick skillet over medium heat. Place the rolled puran poli on the hot tava and cook for about 1-2 minutes on each side, applying ghee as needed, until golden brown spots appear.
- Repeat the process for the remaining dough and filling.
- Serve warm with a dollop of ghee on top.
