Ingredients

  • Basmati rice - 1 cup
  • Split yellow moong dal - 1/2 cup
  • Jaggery - 1/3 cup, grated
  • Cardamom powder - 1/2 teaspoon
  • Salt - a pinch
  • Coconut oil - for cooking
  • Water - as needed

Steps

  1. Soak the basmati rice and split yellow moong dal in water for at least 4 hours or overnight.
  2. Drain the soaked rice and dal, then blend them together with a little water into a smooth batter.
  3. Add a pinch of salt to the batter and let it rest for 15 minutes.
  4. In a saucepan, combine the grated jaggery and a small amount of water over medium heat, stirring until the jaggery melts completely.
  5. Add the cardamom powder to the melted jaggery, then stir in the cooked moong dal until well combined and thickened to a paste. Remove from heat and let it cool.
  6. Heat a non-stick skillet or tava over medium heat and add a little coconut oil.
  7. Pour a ladleful of the batter onto the skillet and spread it into a thin circle.
  8. Cook until the edges start to lift and the bottom is golden brown, then flip and cook the other side for a minute.
  9. Once done, place a spoonful of the jaggery and dal mixture in the center of the dosa, fold it over, and serve warm.
