  • Lime juice - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Cumin powder - 1/2 teaspoon

Steps

  1. Preheat your oven to 180°C (350°F).
  2. Spread the pumpkin seeds on a baking tray and roast them in the oven for about 10 minutes, or until they are lightly golden and fragrant.
  3. While the seeds are roasting, prepare the vegetables by dicing the tomatoes and finely chopping the red onion and green chili.
  4. In a bowl, combine the diced tomatoes, red onion, cilantro, and green chili.
  5. Once the pumpkin seeds are done roasting, let them cool slightly before adding them to the vegetable mixture.
