Ingredients

  • Cooked rice - 200 grams
  • Tamarind paste - 2 tablespoons
  • Water - 100 ml
  • Peanuts - 30 grams
  • Mustard seeds - 1 teaspoon
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Asafoetida (hing) - a pinch
  • Curry leaves - 10 leaves
  • Salt - to taste
  • Oil (preferably sesame) - 2 tablespoons
  • Fresh coriander - for garnish

Steps

  1. Heat 1 tablespoon of oil in a pan over medium heat. Add the mustard seeds and let them splutter.
  2. Add the cumin seeds, peanuts, and curry leaves. Sauté for 2-3 minutes until the peanuts are golden brown.
  3. Stir in the turmeric powder, red chili powder, and asafoetida, and sauté for another minute.
  4. Add the tamarind paste and water to the pan. Stir well and cook for about 5 minutes until the mixture thickens slightly.
  5. In a large bowl, combine the cooked rice with the tamarind mixture. Mix thoroughly, ensuring the rice is evenly coated.
  6. Adjust salt to taste and drizzle the remaining oil over the rice. Mix again.
  7. Garnish with fresh coriander before serving.
