- Cooked rice - 200 grams
- Tamarind paste - 2 tablespoons
- Water - 100 ml
- Peanuts - 30 grams
- Mustard seeds - 1 teaspoon
- Cumin seeds - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1 teaspoon
- Asafoetida (hing) - a pinch
- Curry leaves - 10 leaves
- Salt - to taste
- Oil (preferably sesame) - 2 tablespoons
- Fresh coriander - for garnish
Steps
- Heat 1 tablespoon of oil in a pan over medium heat. Add the mustard seeds and let them splutter.
- Add the cumin seeds, peanuts, and curry leaves. Sauté for 2-3 minutes until the peanuts are golden brown.
- Stir in the turmeric powder, red chili powder, and asafoetida, and sauté for another minute.
- Add the tamarind paste and water to the pan. Stir well and cook for about 5 minutes until the mixture thickens slightly.
- In a large bowl, combine the cooked rice with the tamarind mixture. Mix thoroughly, ensuring the rice is evenly coated.
- Adjust salt to taste and drizzle the remaining oil over the rice. Mix again.
- Garnish with fresh coriander before serving.
