- Basmati rice - 1 cup
- Mixed nuts (cashews, almonds, walnuts) - 1/2 cup
- Onion - 1 medium, thinly sliced
- Ginger - 1 inch, grated
- Garlic - 2 cloves, minced
- Green chili - 1, slit
- Cumin seeds - 1 tsp
- Cardamom pods - 2
- Cinnamon stick - 1 inch
- Bay leaf - 1
- Vegetable or chicken broth - 2 cups
- Cooking oil or ghee - 2 tbsp
- Salt - to taste
- Cilantro - for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear. Soak in water for 20 minutes, then drain.
- In a large pot, heat the cooking oil or ghee over medium heat. Add cumin seeds, cardamom pods, cinnamon stick, and bay leaf. Sauté for 1-2 minutes until fragrant.
- Add the sliced onion and sauté until golden brown. Then, add the grated ginger, minced garlic, and slit green chili. Cook for another 2 minutes.
- Stir in the mixed nuts and cook for an additional 2 minutes until they are lightly toasted.
- Add the soaked and drained rice to the pot, gently mixing it with the spices and nuts to coat the rice.
- Pour in the vegetable or chicken broth and add salt to taste. Bring to a boil, then reduce the heat to low and cover the pot.
- Cook for 15-20 minutes or until the rice is tender and the liquid is absorbed. Avoid lifting the lid frequently.
- Once cooked, remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork and garnish with chopped cilantro before serving.
