Ingredients

  • Basmati rice - 1 cup
  • Mixed nuts (cashews, almonds, walnuts) - 1/2 cup
  • Onion - 1 medium, thinly sliced
  • Ginger - 1 inch, grated
  • Garlic - 2 cloves, minced
  • Green chili - 1, slit
  • Cumin seeds - 1 tsp
  • Cardamom pods - 2
  • Cinnamon stick - 1 inch
  • Bay leaf - 1
  • Vegetable or chicken broth - 2 cups
  • Cooking oil or ghee - 2 tbsp
  • Salt - to taste
  • Cilantro - for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear. Soak in water for 20 minutes, then drain.
  2. In a large pot, heat the cooking oil or ghee over medium heat. Add cumin seeds, cardamom pods, cinnamon stick, and bay leaf. Sauté for 1-2 minutes until fragrant.
  3. Add the sliced onion and sauté until golden brown. Then, add the grated ginger, minced garlic, and slit green chili. Cook for another 2 minutes.
  4. Stir in the mixed nuts and cook for an additional 2 minutes until they are lightly toasted.
  5. Add the soaked and drained rice to the pot, gently mixing it with the spices and nuts to coat the rice.
  6. Pour in the vegetable or chicken broth and add salt to taste. Bring to a boil, then reduce the heat to low and cover the pot.
  7. Cook for 15-20 minutes or until the rice is tender and the liquid is absorbed. Avoid lifting the lid frequently.
  8. Once cooked, remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork and garnish with chopped cilantro before serving.
