Ingredients
- Fresh mint leaves - 100 grams
- Onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Ginger - 1 inch piece, grated
- Green chili - 1, slit
- Vegetable broth - 500 ml
- Coconut milk - 100 ml
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
- Coriander leaves - for garnish
Steps
- Heat the olive oil in a pot over medium heat. Add chopped onion and sauté until translucent.
- Add minced garlic, grated ginger, and slit green chili. Cook for another 2-3 minutes until fragrant.
- Add the fresh mint leaves and sauté for 2 minutes until they wilt.
- Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 10 minutes.
- Remove from heat and blend the mixture until smooth using an immersion blender.
- Stir in the coconut milk, salt, and black pepper. Heat gently for another 5 minutes.
- Add lemon juice and mix well. Taste and adjust seasoning if necessary.
- Serve hot, garnished with fresh coriander leaves.
