Ingredients

  • Fresh mint leaves - 100 grams
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 inch piece, grated
  • Green chili - 1, slit
  • Vegetable broth - 500 ml
  • Coconut milk - 100 ml
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon
  • Coriander leaves - for garnish

Steps

  1. Heat the olive oil in a pot over medium heat. Add chopped onion and sauté until translucent.
  2. Add minced garlic, grated ginger, and slit green chili. Cook for another 2-3 minutes until fragrant.
  3. Add the fresh mint leaves and sauté for 2 minutes until they wilt.
  4. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 10 minutes.
  5. Remove from heat and blend the mixture until smooth using an immersion blender.
  6. Stir in the coconut milk, salt, and black pepper. Heat gently for another 5 minutes.
  7. Add lemon juice and mix well. Taste and adjust seasoning if necessary.
  8. Serve hot, garnished with fresh coriander leaves.
