Ingredients

  • Fresh mint leaves - 1 cup, packed
  • Cilantro leaves - 1/2 cup, packed
  • Ginger - 1 inch piece, peeled and chopped
  • Green chili - 1, slit
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Vegetable broth - 2 cups
  • Lemon juice - 1 tablespoon
  • Cumin seeds - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Heat olive oil in a pot over medium heat. Add cumin seeds and let them sizzle for a few seconds.
  2. Add chopped onions and sauté until they become translucent.
  3. Stir in minced garlic, chopped ginger, and green chili. Cook for another 2-3 minutes until fragrant.
  4. Add the fresh mint leaves and cilantro to the pot, stirring them in for about 2 minutes.
  5. Pour in the vegetable broth and bring to a boil. Reduce the heat and let it simmer for 10 minutes.
  6. Remove from heat and blend the mixture using an immersion blender until smooth. Alternatively, transfer to a blender in batches.
  7. Return the blended soup to the pot, add lemon juice, and season with salt and black pepper to taste.
  8. Heat the soup gently for another 5 minutes, then serve hot.
