- Fresh mint leaves - 1 cup, packed
- Cilantro leaves - 1/2 cup, packed
- Ginger - 1 inch piece, peeled and chopped
- Green chili - 1, slit
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Vegetable broth - 2 cups
- Lemon juice - 1 tablespoon
- Cumin seeds - 1/2 teaspoon
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Heat olive oil in a pot over medium heat. Add cumin seeds and let them sizzle for a few seconds.
- Add chopped onions and sauté until they become translucent.
- Stir in minced garlic, chopped ginger, and green chili. Cook for another 2-3 minutes until fragrant.
- Add the fresh mint leaves and cilantro to the pot, stirring them in for about 2 minutes.
- Pour in the vegetable broth and bring to a boil. Reduce the heat and let it simmer for 10 minutes.
- Remove from heat and blend the mixture using an immersion blender until smooth. Alternatively, transfer to a blender in batches.
- Return the blended soup to the pot, add lemon juice, and season with salt and black pepper to taste.
- Heat the soup gently for another 5 minutes, then serve hot.
