Ingredients
- Basmati rice - 1 cup (200g)
- Fresh mint leaves - 1 cup (packed, 30g)
- Onion - 1 medium, finely sliced (100g)
- Green chili - 1, slit
- Ginger - 1 inch, grated
- Garlic - 2 cloves, minced
- Cumin seeds - 1 teaspoon
- Mustard seeds - 1/2 teaspoon
- Turmeric powder - 1/2 teaspoon
- Salt - to taste
- Vegetable oil - 2 tablespoons
- Water - 2 cups (480ml)
Steps
- Rinse the basmati rice under cold water until the water runs clear. Soak it in water for 20 minutes, then drain.
- In a blender, combine the fresh mint leaves, green chili, ginger, and garlic. Blend into a smooth paste, adding a little water if necessary.
- Heat the vegetable oil in a pot over medium heat. Add the cumin and mustard seeds, and let them splutter.
- Add the sliced onion and sauté until golden brown.
- Stir in the turmeric powder and the mint paste. Cook for 2-3 minutes until the raw smell disappears.
- Add the soaked and drained rice to the pot and stir for a minute to coat the rice with the mint mixture.
- Pour in 2 cups of water and add salt to taste. Bring it to a boil.
- Once it starts boiling, reduce the heat to low, cover the pot, and let it simmer for 15 minutes or until the rice is cooked and the water is absorbed.
- Turn off the heat and let it sit covered for another 5 minutes. Fluff the rice with a fork before serving.
