- Fresh mint leaves - 1 cup, packed
- Fresh coriander leaves - 1/2 cup, packed
- Onion - 1 medium, finely chopped
- Ginger-garlic paste - 1 tablespoon
- Green chili - 1, slit
- Lemon juice - 2 tablespoons
- Yogurt - 100 grams
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1 teaspoon
- Cumin powder - 1/2 teaspoon
- Garam masala - 1/2 teaspoon
- Salt - to taste
- Oil - 2 tablespoons
- Water - 1/2 cup
Steps
- In a blender, combine the mint leaves, coriander leaves, lemon juice, yogurt, turmeric powder, red chili powder, cumin powder, and salt to make a smooth paste.
- In a large bowl, marinate the chicken thighs with the mint-coriander paste, ginger-garlic paste, and garam masala. Let it marinate for at least 15 minutes.
- Heat oil in a pan over medium heat. Add the chopped onion and sauté until golden brown.
- Add the marinated chicken and slit green chili to the pan. Cook for about 5 minutes, stirring occasionally.
- Pour in the water, cover the pan, and let it simmer for 20 minutes until the chicken is cooked through and tender.
- Check the seasoning and adjust salt if necessary. Cook uncovered for an additional 5 minutes to thicken the sauce.
- Serve hot with rice or naan, garnished with extra mint leaves if desired.
