Ingredients

  • Prawns (cleaned and deveined) - 200 grams
  • Basil leaves - 50 grams
  • Garlic - 2 cloves
  • Pine nuts - 30 grams
  • Parmesan cheese (grated) - 30 grams
  • Olive oil - 60 ml
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Pasta (optional) - 150 grams

Steps

  1. In a food processor, combine basil leaves, garlic, pine nuts, and Parmesan cheese. Pulse until finely chopped.
  2. With the processor running, slowly drizzle in olive oil until the mixture becomes a smooth paste. Add lemon juice, salt, and black pepper to taste. Set the pesto aside.
  3. In a large pan, heat a tablespoon of olive oil over medium heat. Add cleaned prawns and sauté until they turn pink, about 3-4 minutes. Season with salt and black pepper.
  4. If using pasta, cook it according to package instructions. Drain and reserve a bit of pasta water.
  5. Add the prepared pesto to the pan with prawns, stirring to combine. If the pesto is too thick, add a splash of reserved pasta water to reach the desired consistency.
  6. Toss with cooked pasta if using, or serve the prawn pesto mixture on its own. Garnish with extra basil leaves and Parmesan if desired.
