- Prawns (cleaned and deveined) - 200 grams
- Basil leaves - 50 grams
- Garlic - 2 cloves
- Pine nuts - 30 grams
- Parmesan cheese (grated) - 30 grams
- Olive oil - 60 ml
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Pasta (optional) - 150 grams
Steps
- In a food processor, combine basil leaves, garlic, pine nuts, and Parmesan cheese. Pulse until finely chopped.
- With the processor running, slowly drizzle in olive oil until the mixture becomes a smooth paste. Add lemon juice, salt, and black pepper to taste. Set the pesto aside.
- In a large pan, heat a tablespoon of olive oil over medium heat. Add cleaned prawns and sauté until they turn pink, about 3-4 minutes. Season with salt and black pepper.
- If using pasta, cook it according to package instructions. Drain and reserve a bit of pasta water.
- Add the prepared pesto to the pan with prawns, stirring to combine. If the pesto is too thick, add a splash of reserved pasta water to reach the desired consistency.
- Toss with cooked pasta if using, or serve the prawn pesto mixture on its own. Garnish with extra basil leaves and Parmesan if desired.
