  • Tomato - 1 medium, pureed
  • Coconut milk - 200 ml
  • Green chilies - 2, slit
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Garam masala - 1 teaspoon
  • Salt - to taste
  • Fresh coriander leaves - for garnish

Steps

  1. Heat coconut oil in a pan over medium heat. Once hot, add the chopped onions and sauté until they turn golden brown.
  2. Add minced garlic and grated ginger to the pan, and sauté for another 2 minutes until fragrant.
  3. Stir in the pureed tomato, green chilies, turmeric powder, and red chili powder. Cook for about 5-7 minutes until the oil starts to separate from the mixture.
  4. Pour in the coconut milk and add salt to taste. Stir well and bring to a gentle simmer.
  5. Add the cleaned prawns to the pan, cover, and cook for about 5-7 minutes, or until the prawns are cooked through and opaque.
  6. Sprinkle garam masala over the dish, stir gently, and let it simmer for an additional 2 minutes.
  7. Remove from heat and garnish with fresh coriander leaves before serving.
