Ingredients

  • Prawns (peeled and deveined) - 200 grams

  • Ginger (finely chopped) - 1 tablespoon
  • Garlic (finely chopped) - 1 tablespoon
  • Green chilies (slit) - 1-2
  • Onion (finely chopped) - 1 small
  • Tomato (chopped) - 1 medium
  • Coconut milk - 200 ml
  • Water - 400 ml
  • Salt - to taste
  • Black pepper powder - 1/2 teaspoon
  • Coriander leaves (for garnish) - a handful

Steps

  1. Heat the coconut oil in a pot over medium heat.
  2. Add mustard seeds and cumin seeds, and let them crackle.
  3. Stir in the chopped ginger, garlic, and green chilies, and sauté until fragrant.
  4. Add the chopped onion and cook until translucent.
  5. Add the chopped tomato and cook until soft.
  6. Pour in the water and bring to a boil.
  7. Reduce the heat and add the coconut milk, stirring to combine.
  8. Season with salt and black pepper, adjusting to taste.
  9. Add the prawns and simmer for 5-7 minutes, or until they are cooked through.
  10. Remove from heat and garnish with fresh coriander leaves before serving.
