Steps
- Heat the coconut oil in a pot over medium heat.
- Add mustard seeds and cumin seeds, and let them crackle.
- Stir in the chopped ginger, garlic, and green chilies, and sauté until fragrant.
- Add the chopped onion and cook until translucent.
- Add the chopped tomato and cook until soft.
- Pour in the water and bring to a boil.
- Reduce the heat and add the coconut milk, stirring to combine.
- Season with salt and black pepper, adjusting to taste.
- Add the prawns and simmer for 5-7 minutes, or until they are cooked through.
- Remove from heat and garnish with fresh coriander leaves before serving.
