- Prawns - 300 grams, cleaned and deveined
- Coconut milk - 200 ml
- Onion - 1 medium, finely chopped
- Tomato - 1 medium, chopped
- Garlic - 3 cloves, minced
- Ginger - 1 inch, minced
- Green chili - 1, slit
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Curry leaves - 10 leaves
- Coconut oil - 2 tablespoons
- Salt - to taste
- Fresh coriander leaves - for garnish
Steps
- Heat the coconut oil in a pan over medium heat. Add the finely chopped onion and sauté until golden brown.
- Add the minced garlic, ginger, and slit green chili. Sauté for another 2 minutes until fragrant.
- Stir in the chopped tomato and cook until soft and mushy.
- Add the turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook for 2-3 minutes until the spices are well blended.
- Add the curry leaves and pour in the coconut milk. Stir well and bring to a gentle simmer.
- Add the cleaned prawns and cook for about 5-7 minutes, or until the prawns turn pink and are cooked through.
- Sprinkle garam masala over the dish, stir gently, and cook for another 2 minutes.
- Remove from heat and garnish with fresh coriander leaves before serving.
