Ingredients

  • Prawns - 300 grams, cleaned and deveined
  • Coconut milk - 200 ml
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, chopped
  • Garlic - 3 cloves, minced
  • Ginger - 1 inch, minced
  • Green chili - 1, slit
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Curry leaves - 10 leaves
  • Coconut oil - 2 tablespoons
  • Salt - to taste
  • Fresh coriander leaves - for garnish

Steps

  1. Heat the coconut oil in a pan over medium heat. Add the finely chopped onion and sauté until golden brown.
  2. Add the minced garlic, ginger, and slit green chili. Sauté for another 2 minutes until fragrant.
  3. Stir in the chopped tomato and cook until soft and mushy.
  4. Add the turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook for 2-3 minutes until the spices are well blended.
  5. Add the curry leaves and pour in the coconut milk. Stir well and bring to a gentle simmer.
  6. Add the cleaned prawns and cook for about 5-7 minutes, or until the prawns turn pink and are cooked through.
  7. Sprinkle garam masala over the dish, stir gently, and cook for another 2 minutes.
  8. Remove from heat and garnish with fresh coriander leaves before serving.
