  • Spinach leaves - 1 cup

Steps

  1. Preheat the oven to 220°C (428°F).
  2. In a pan, heat olive oil over medium heat and sauté the chopped onion until translucent.
  3. Add the minced garlic and grated ginger, cooking for another minute until fragrant.
  4. Stir in the chopped tomato, curry powder, turmeric powder, and red chili powder; cook for 5 minutes until the tomatoes soften.

  6. Season with salt to taste and remove from heat.
