  • Malvani masala - 2 tablespoons
  • Coconut milk - 200 ml
  • Tamarind paste - 1 teaspoon
  • Coriander leaves - a handful, chopped
  • Salt - to taste
  • Water - 100 ml

Steps

  1. Heat coconut oil in a pan over medium heat. Add the chopped onions and sauté until they turn golden brown.
  2. Add minced garlic and grated ginger to the pan, and sauté for an additional 2 minutes until fragrant.
  3. Stir in the tomato puree and cook for about 5 minutes until the mixture thickens and the oil starts to separate.
  4. Add the Malvani masala to the pan, stirring well to combine, and cook for another 2 minutes.
  5. Pour in the coconut milk and water, bringing the mixture to a gentle simmer.
  6. Add the cleaned prawns to the simmering curry and cook for 5-7 minutes until the prawns are opaque and cooked through.
  7. Stir in the tamarind paste and salt to taste, adjusting the seasoning as necessary.
  8. Finish by garnishing with chopped coriander leaves before serving.
