  • Prawns - 300 grams, cleaned and deveined
  • Coconut oil - 2 tablespoons
  • Mustard seeds - 1 teaspoon
  • Curry leaves - 10 leaves
  • Onion - 1 medium, finely chopped
  • Garlic - 3 cloves, minced
  • Ginger - 1 inch, minced
  • Green chilies - 2, slit
  • Tomato - 1 medium, chopped
  • Red chili powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Coconut milk - 200 ml
  • Salt - to taste
  • Cilantro - for garnish

Steps

  1. Heat coconut oil in a pan over medium heat. Add mustard seeds and let them splutter.
  2. Add curry leaves, chopped onions, and sauté until the onions turn golden brown.
  3. Stir in the minced garlic, ginger, and slit green chilies. Cook for 2-3 minutes until fragrant.
  4. Add the chopped tomato, red chili powder, turmeric powder, coriander powder, and salt. Cook until the tomato softens.
  5. Add the cleaned prawns and cook for 3-4 minutes until they turn pink.
  6. Pour in the coconut milk and bring to a gentle simmer. Add garam masala and cook for another 5 minutes.
  7. Adjust seasoning if necessary and garnish with chopped cilantro before serving.
