- Prawns (peeled and deveined) - 300 grams
- Coconut oil - 2 tablespoons
- Mustard seeds - 1 teaspoon
- Curry leaves - 10 leaves
- Onion (finely chopped) - 1 medium
- Ginger (grated) - 1 tablespoon
- Garlic (minced) - 1 tablespoon
- Tomato (chopped) - 1 medium
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Coconut milk - 200 ml
- Salt - to taste
- Fresh coriander leaves (for garnish) - a handful
Steps
- Heat coconut oil in a pan over medium heat. Add mustard seeds and let them splutter.
- Add curry leaves, chopped onions, grated ginger, and minced garlic. Sauté until the onions turn translucent.
- Stir in the chopped tomato, turmeric powder, red chili powder, and coriander powder. Cook until the tomato softens.
- Add the prawns to the pan and mix well, cooking for about 3-4 minutes until they turn pink.
- Pour in the coconut milk and add salt to taste. Allow the curry to simmer for 10 minutes on low heat.
- Remove from heat and garnish with fresh coriander leaves before serving.
