Ingredients

  • Prawns (peeled and deveined) - 300 grams
  • Fresh curry leaves - 15 leaves
  • Coconut oil - 2 tablespoons
  • Onion (finely chopped) - 1 medium
  • Garlic (minced) - 3 cloves
  • Ginger (grated) - 1 tablespoon
  • Green chilies (slit) - 2
  • Tomato (chopped) - 1 medium
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Garam masala - 1/2 teaspoon
  • Salt - to taste
  • Fresh coriander leaves (for garnish) - a handful

Steps

  1. Heat coconut oil in a pan over medium heat.
  2. Add finely chopped onions and sauté until they turn golden brown.
  3. Stir in minced garlic, grated ginger, and slit green chilies; sauté for 2-3 minutes until fragrant.
  4. Add chopped tomatoes and cook until they soften.
  5. Sprinkle in turmeric powder, red chili powder, coriander powder, and salt; mix well and cook for another 2 minutes.
  6. Add the fresh curry leaves and prawns; stir to coat the prawns with the spices.
  7. Cook for about 5-7 minutes, or until the prawns turn pink and are cooked through.
  8. Sprinkle garam masala over the prawns and mix gently.
  9. Remove from heat and garnish with fresh coriander leaves before serving.
