- Basmati rice - 150 grams
- Prawns (cleaned and deveined) - 200 grams
- Onion (thinly sliced) - 1 medium
- Tomato (chopped) - 1 medium
- Ginger-garlic paste - 1 tablespoon
- Coconut milk - 100 ml
- Biryani masala - 1 tablespoon
- Turmeric powder - 1/2 teaspoon
- Red chili powder - 1 teaspoon
- Cilantro (chopped) - 2 tablespoons
- Mint leaves (chopped) - 2 tablespoons
- Vegetable oil - 2 tablespoons
- Salt - to taste
- Water - 300 ml
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a large pot, heat vegetable oil over medium heat and add the sliced onions. Sauté until golden brown.
- Add the ginger-garlic paste to the pot and cook for another minute until fragrant.
- Stir in the chopped tomatoes and cook until they soften, about 3-4 minutes.
- Add the biryani masala, turmeric powder, and red chili powder. Mix well and cook for another 2 minutes.
- Add the cleaned prawns to the pot and cook until they turn pink, about 3-4 minutes.
- Pour in the coconut milk and bring to a simmer. Season with salt and mix well.
- Drain the soaked rice and add it to the pot along with 300 ml of water. Stir gently to combine.
- Bring the mixture to a boil, then cover and reduce the heat to low. Cook for 15-20 minutes or until the rice is fully cooked and has absorbed the liquid.
- Once cooked, remove from heat and let it sit covered for 5 minutes. Fluff the biryani with a fork.
- Garnish with chopped cilantro and mint leaves before serving.
