Ingredients

  • Ginger (grated) - 1 inch piece
  • Tomato (chopped) - 1 medium
  • Red chili powder - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Coriander powder - 1 teaspoon
  • Cumin powder - 1/2 teaspoon
  • Vinegar - 2 tablespoons
  • Brown sugar - 1 teaspoon
  • Salt - to taste
  • Fresh coriander leaves (for garnish) - a handful

Steps

  1. Heat the vegetable oil in a pan over medium heat.
  2. Add the finely chopped onion and sauté until it turns golden brown.
  3. Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.
  4. Add the chopped tomato and cook until it softens, about 3-4 minutes.
  5. Sprinkle in the red chili powder, turmeric powder, coriander powder, cumin powder, and salt, stirring well to combine and cook for 2 minutes.
  6. Add the cleaned prawns to the pan, tossing to coat them in the spice mixture.
  7. Pour in the vinegar and sprinkle the brown sugar over the prawns, mixing well to combine all the ingredients.
  8. Cover the pan and let it simmer for about 5-7 minutes, or until the prawns are cooked through and have absorbed the flavors.
  9. Garnish with fresh coriander leaves before serving.
