Steps
- In a bowl, combine the vindaloo spice mix, white vinegar, minced garlic, grated ginger, olive oil, salt, and black pepper to create a marinade.
- Add the pork cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour (up to overnight for more flavor).
- Preheat the grill to medium-high heat.
- Thread the marinated pork, bell pepper pieces, and onion wedges onto the skewers, alternating between the ingredients.
